Here's one to tempt your tummy - you'll have to read the book to find some more!

Barmbrack

1 pound sultanas (2 cups)
1 pound brown sugar (2 cups)
1 pound flour (2 cups)
1 pound raisins (2 cups)
3 cups milkless tea
3 eggs
3 level teaspoons baking powder
3 teaspoons mixed spice

Soak the fruit and sugar in the tea overnight. The next day, add alternately 1 pound flour and 3 beaten eggs. Finally add 3 level teaspoons baking powder and the dried fruit. If you like it spicy, add 3 teaspoons mixed spice. Turn into 3 greased tins, and bake for 1 1/2 hours in a slow oven (300°F). When cool, brush the top with melted honey to give a fine glaze.

Normally eaten toasted with butter. The traditional Ulster cook will use yeast, but this is an easier recipe.
